Trinidad Fizz

COCKTAIL INGREDIENTS:
- 30 ml Angostura Bitters
- 7,5 ml Grenadine
- 7,5 ml Rich Simple Syrup
- 10 ml Fresh Lemon Juice
- 5 ml Fresh Lime Juice
- 5 ml Cream (half and half)
- 22,5 ml Egg White
- 100 ml Soda Water (Chilled)

GARNISH:
- Lime Twist
- Pineapple Fronds

INSTRUCTIONS:
• Combine all of the ingredients except soda water in a cocktail shaker.
• Dry shake (without ice) to emulsify the egg whites.
• Add one or two ice cubes and shake until fully dissolved.
• Pour the contents into a chilled cocktail glass and let it set for a minute or two in the fridge, until the foam fully forms.
• Top up with chilled soda water to raise the foam. (For better result you can make hole with a straw to pour the soda water through or pour it along the bar spoon in order not to ruin the foam.)
• Garnish with a lime twist and some pineapple fronds.

Fizz is one of my favourite cocktail styles: decadent, indulgent and a bit of a challenge to make. This time, I want to introduce you to a Trinidad Fizz, a cocktail focusing on tropical spice and fruit notes.

Interestingly, this particular cocktail is based around a heavy dose of bitters and features no other spirits or liqueurs, which in turn makes this a rather low ABV drink.

Angostura Bitters sets the tone for the cocktail with a base full of cinnamon, cardamom, cloves and other tropical spices. Next to it all other ingredients play only a supporting role. A blend of lemon and lime juices provide the refreshing and fragrant tartness, while combo of simple syrup and grenadine establishes the balance. A touch of cream or half and half along with egg whites gives the drink that decadent and airy texture fizzes are known and loved for. Last but not least, a generous amount of chilled soda water, raises the cocktail foam and lengthens the cocktail, letting the flavours develop and unveil themselves.

(Regarding the preparation, I tested the method provided in the source link from Difford’s Guide, but it did not give a consistently good result, often resulting in weak foam (probably my own mistake). Therefore, I employed my trusted and tested method, which is a bit more laborious, but so far haven’t disappointed and delivered consistent results.)

In the end, Trinidad fizz is a light and airy cocktail full of tropical spirit. Being a relatively low ABV cocktail it also makes sure, that you feel well and fresh the morning after. So, give it a try if you get a chance.
