Tomatini
COCKTAIL INGREDIENTS:
- 100 g Ripe Campari Tomato or
Tomatoes on the Vine
- 52,5 ml Vodka
- 10 ml White Balsamic Vinegar
- 7,5 ml Simple Syrup
- Pinch of Salt
- Crack of Black Pepper
GARNISH:
- Cherry Tomato
INSTRUCTIONS:
• Muddle tomatoes in a cocktail shaker.
• Add rest of the ingredients.
• Add ice and shake until chilled.
• Double strain into a chilled cocktail glass.
• Garnish cherry tomato.

Use of tomatoes in cocktails is a contentious issue, some love it and some simply cannot stand it. I, personally, find it interesting: a new way of introducing an aspect of savouriness to a drink. Tomatini is a great example of what can be achieved when tomatoes are utilized with careful thought and consideration.
Base of the cocktail is vodka, a clear and neutral spirit providing the blank high proof canvas for the drink. Muddled tomatoes add some distinct savoury, fruity notes, which are then paired with the acidity and subtle sweetness of white balsamic vinegar, creating a unique flavour synthesis. A touch of salt and pepper seasons the cocktail, strengthening tomato notes and bringing a bit of spiciness to the mix. Touch of simple syrup dots all the i’s and crosses all the t’s, subtly balancing the acidity and brightening the serve up.
All in all, Tomatini might not be a cocktail for everyone, but it is a tasty and unique flavour experiment, I highly encourage you to try.
