COCKTAIL INGREDIENTS:
- 30 ml Aged Barbados Rum
- 30 ml Dark Jamaican Rum
- 15-20 ml Cherry Syrup
(alternatively use 10-15 ml of simple syrup and 5 ml of syrup from the jar of cherries)
- 15 ml Fresh Pineapple Juice
- 15 ml Fresh Lime Juice
- 120 ml Crushed Ice

GARNISH:
- Pineapple Fronds
- Edible Flowers
- Lime Wheel

INSTRUCTIONS:
• Combine all of the ingredients in a blender tin.
• Flash blend with crushed ice.
• Pour the contents into a cocktail glass.
• Top with more crushed ice if needed.
• Garnish with some pineapple fronds, edible flower and a lime wheel.

When it comes to tiki cocktails Don The Beachcomber’s name is a guarantee for a high quality drink and Shark’s Tooth is no exception. It has it all, fruity rum laden flavour profile and even a catchy name.

Traditionally, base of this cocktail is made only with Barbados rum and dark Jamaican rum is served in a separate shot glass alongside of it, which can later be poured into the drink. I tested this approach first and while it was fun, I truly think this drink deserves those funky Jamaican rum notes to be blended in there right from the start. So, I split the base between aged Barbados rum with notes of vanilla, oak, toffee, enriched by a hint of coconut and dark Jamaican rum with bold ripe fruit tones and that signature banana flavour. A touch of pineapple juice, traditional tiki ingredient, further builds on the fruity flavour of the cocktail by delicately balancing between sweet and acidic. Lime juice adds the all-important tart freshness to the drink, giving it a bit of vibrancy. Finally, cherry syrup gives the cocktail that rich depth of flavour, subtly tweaking the traditional tiki profile. (I used 10 ml of simple syrup and 7,5 ml of cherry syrup from the jar of cocktail cherries, it worked like a charm and saved me from making a cherry syrup from scratch.)

Shark’s Tooth is a fun and delicious tiki cocktail to try. If you feel down and need something to lift your mood, this playful drink can definitely help.
