Nui Nui



COCKTAIL INGREDIENTS:
- 20 ml Demerara Rum
- 20 ml Jamaican Rum
- 20 ml Cachaça
- 30 ml Fresh Orange Juice
- 22,5 ml Cinnamon Syrup
- 22,5 ml Fresh Lime Juice
- 7,5 ml Vanilla Syrup
- 7,5 ml Allspice Dram
GARNISH:
- Your preferred aromatic bitters
- Edible Flower
- Sprig of Mint
- Dehydrated Lime Wheel
INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker.
• Add a small amount of crushed ice and shake briefly, but energetically.
• Strain over fresh crushed ice into a cocktail glass.
• Garnish with a few dashes of aromatic bitters, dehydrated lime wheel, a sprig of mint and an edible flower.

I‘m always on the look for new and delicious tiki cocktails to try. Luckily, so far, I have not encountered a shortage of new recipes and it does not seem that I will any time soon.
Nui Nui is one more brainchild of tiki founder Don the Beachcomber, which has been revived and reinvented by Andrew Bohrer.
This particular tiki cocktail splits the base not between two, but three spirits. First one on the list is Demerara rum with rich molasses and tropical spice notes. Second, Jamaican rum brings its signature funky sweetness to the mix reminiscent of overripe banana. Finally, cachaça adds a bit of grassy, herbal tones increasing the overall complexity of the cocktail base. Sweetness of the cocktail also comes from three sources. Cinnamon syrup, classic staple of many tiki cocktails, plays very well with the rum and its tropical spice notes. Vanilla syrup provides additional sweetness with the well-known and beloved vanilla aroma. Allspice Dram, another tiki staple, brings delicious and strong spice notes turning this cocktail into a true tiki creation. A touch of lime juice gives the so needed tartness to the cocktail, helping to balance it out. A dose of orange juice, lengthens the drink while at the same time imparting even more citrusy flavour. Last, but not least, aromatic bitters; in this particular cocktail, it is placed under garnishes, but I would argue that it should land on the main ingredient list. You are free to chose your favourite aromatic bitters, but I particularly love an even split between Angostura and Peychaud’s.
All in all, Nui Nui is a true tiki cocktail in every sense of the word, starting from the long list of ingredients and ending with a remarkably delicious, tropical flavour palette. Perfect summer refresher, that can provide you with an escape from the mundane.
