Airmail
COCKTAIL INGREDIENTS:
- 30 ml Lightly-Aged Blended Rum
- 15 ml Fresh Lime Juice
- 15 ml Honey Syrup
- 30 ml Chilled Brut Champagne
GARNISH:
- Edible Flower
- Charred Lime Wheel
INSTRUCTIONS:
• Combine all of the ingredients except champagne in a cocktail shaker.
• Add ice and shake until chilled.
• Double strain into a chilled cocktail glass.
• Top with chilled champagne.
• Garnish with a charred lime wheel and an edible flower.

The Airmail cocktail is a rather simple yet interestingly complex cocktail, with its roots in two very well-known classics: French 75 and Daiquiri. This idea alone is enough to pique the interest of any cocktail lover.
Base of the cocktail is blended lightly aged rum with tasty notes of brown sugar, honey, tropical fruits and spice. Fresh lime juice gives the cocktail a tart citrusy kick reminiscent of the daiquiri. Sweetness and balance are provided by the delicate floral notes of honey syrup, giving the cocktail an additional complex dimension. Last, but not least dry champagne lengthens the drink, brings it to life with a touch of effervescence while at the same time increasing the complexity with crisp and dry notes of apples, pears and citrus.
All in all, Airmail cocktail is a crisp and clean drink perfect for social gatherings and parties. I highly recommend adding it to your repertoire.
