The Art of Choke is an amazing drink, that manages to deliciously break fundamental cocktail making rules, but still earn its place among the modern classics. On paper the recipe might look a little off, but all doubts disappear right after the first sip.

Base of the cocktail is split between, lightly aged blended (or in other words, white) rum and Cynar. The latter is somewhat more dominating between the two, with bold bitter-sweet artichoke, caramel and toffee notes. While white rum, provides the proof and supports the amaro with subtle vanilla and tropical spice notes. Demerara syrup further builds the sweetness with molasses rich flavour, pairing well with the amaro, but also bolstering the rum. Fresh lime juice, provides the balance along with the distinctive tartness that brings things to life. A touch of green chartreuse works as a delicate finishing touch of complex herbal, botanical notes, without overtaking the overall flavour profile.

The Art of Choke is an incredible cocktail, especially for an amaro lover. Complex, well-balanced, full of bold flavours and perfect for summer or winter.
