Snake Bit Sprout

COCKTAIL INGREDIENTS:
- 45 ml Chamomile-Infused Gin
- 15 ml Fresh Lime Juice
- 15 ml Pineapple Juice
- 15 ml Simple Syrup
- 45 ml Chilled Dry Unfiltered Apple Juice (Cider)

CHAMOMILE-INFUSED GIN:
- 200 ml London Dry Gin
- 120 ml Dried Chamomile Flowers

GARNISH:
- Pineapple Fronds
- Lime Twist
- Charred Lime Wheel

INSTRUCTIONS - CHAMOMILE-INFUSED GIN:
• Mix gin and chamomile flowers in a container.
• Let it infuse for around 3 hours.
• Strain out the solids.
• Optional - run through the coffee filter

INSTRUCTIONS:
• Combine all of the ingredients except apple juice in a cocktail shaker.
• Add ice and shake until chilled.
• Strain into a cocktail glass over fresh pebble ice.
• Top with chilled apple juice.
• Garnish with pineapple fronds, lime twist and a charred lime wheel.

I will be honest, chamomile or chamomile tea in particular is not my favourite – a folk remedy tied with pretty much every childhood virus. So, when I first saw the recipe for Snake Bit Sprout, I was not leaping for joy, but decided to give it a go nonetheless. I guess enough time has passed.

Therefore, I was very pleasantly surprised when taking that first delicious sip left me wanting for more.

Base of the cocktail is a chamomile infused London dry gin where traditional juniper and coriander notes are supplemented by the floral tones of chamomile flowers. Pineapple juice brings delicious fruitiness pairing well with the base spirit and bridging the gap towards sweet and tart apple juice further exploring fruity direction. Fresh lime juice, provides the lively citrus kick with simple syrup rounding everything out and balancing the cocktail for the best possible drinking experience.

All in all, Snake Bit Sprout is a delicious and complex cocktail perfect for summer and early autumn. Refreshing and delicious to the very last drop.
