Rosemary’s Ring

COCKTAIL INGREDIENTS:
- 45 ml Amaro Nonino
- 15 ml Cognac
- 7,5 ml Rosemary Syrup
- 60 ml Chilled Brut Champagne


GARNISH:
- Rosemary Sprig

INSTRUCTIONS:
• Roll the rosemary sprig in your hands to express the oils, then rub it around the inside of a chilled glass.
• Combine all of the ingredients except champagne in a mixing glass.
• Add ice and stir for approx. 45 sec or 60 revolutions.
• Strain into a prepared cocktail glass.
• Top with chilled champagne.
• Garnish with a rosemary sprig.

INSTRUCTIONS FOR ROSEMARY SYRUP:
• In a saucepan combine 200 g of Water and 200 g of plain white sugar.
• Stir over medium heat until sugar dissolves.
• Add 2-3 sprigs of rosemary and brig it to a boil.
• Once mixture begins boiling remove from heat and cover it until it cools.
• Once cool, strain out the solids and store in a sterilised bottle/container in a refrigerator for up to a month.

Rosemary’s Ring is a bubbly cocktail that is easy to make, features a simple garnish and is perfectly suited to celebrate the Christmas with family.

Base of the cocktail is quite unusual for this type of drink – Amaro Nonino. Amaro, right on the get go, brings a lot of complex citrus, caramel and spice notes setting the tone for the cocktail. A subtle addition of cognac complements the base with notes of oak, caramel and dried fruit. Rosemary oils and syrup give it an unusual earthy dimension, taking the cocktail in a slightly surprising direction. Champagne lengthens the drink with dry, crisp effervescence and minerality, while at the same time giving it a celebratory tone.

Rosemary’s Ring is a tasty champagne cocktail with complex earthy flavour profile and garish almost meant for Christmas. That little sprig of rosemary with champagne bubbles all around really creates an impression of a Christmas tree - simple and elegant. I highly recommend giving it a try this holiday season.
