Pineapple Trainwreck



COCKTAIL INGREDIENTS:
- 45 ml Dark Rum
- 15 ml Aged Overproof Rum
- 45 ml Pineapple Juice
- 22,5 ml Ginger Syrup
- 15 ml Fresh Lemon Juice
- 1 Dash Angostura Bitters
- 1 Dash Peychaud's Bitters
GARNISH:
- Sprig of Mint
- Pineapple Fronds
- Candied Ginger
INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker.
• Add ice and shake until chilled.
• Strain into a cocktail glass over fresh ice cubes.
• Garnish with a sprig of mint, pineapple fronds and some candied ginger.

Rum and pineapple is a perfect cocktail match, which probably does not come as a surprise for anyone. However, when you throw a little ginger into the mix, something new and fascinating is created. Thus, taste of the whimsically-named Pineapple Trainwreck is a complete opposite to its name; well-balanced, tasty and refreshing, this cocktail ticks all the boxes for a great drink.
Base of the cocktail is rum, depending of the recipe you go with it is either aged rum or dark rum. I used dark rum because of its rich molasses, spice and fruit notes. Slight touch of aged overproof rum is optional, but since the cocktail is filled with other strong flavours I decided to trust in the tiki tradition and use two rum combination for more complex and sophisticated cocktail base. Hefty dose of pineapple juice sets the fruity tone for the cocktail with sweet and slightly acidic juice. Ginger syrup adds a bit more sweetness while at the same time introducing refreshing ginger bite to the mix completely altering the cocktail profile. Lemon juice helps to restore balance with refreshing fragrant tartness, keeping sweetness in check. Finally, a couple of dashes of bitters adds a bit more spice to the cocktail and brings the ingredients together.
Pineapple Trainwreck is a delightfully delicious and refreshing cocktail utilizing rum, pineapple and ginger combo ingeniously. I highly recommend giving this cocktail a try.
