Parasol

COCKTAIL INGREDIENTS:
- 60 ml Lightly-Aged Blended Rum
- 22,5 ml Fresh Lime Juice
- 22,5 ml Banana Liqueur
- 15 ml Pineapple Juice


GARNISH:
- Edible Flower
- Lime Twist

INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker.
• Add ice and shake until chilled.
• Double strain into a chilled cocktail glass.
• Garnish with a lime twist and an edible flower.

I’m not the biggest fan of champagne and its cocktails – the go to New Years drink, therefore this year I will greet the 2026 with a glass of banana daiquiri inspired riff – Parasol.

Like most of other daiquiris, the base of the cocktail is formed by lightly aged blended rum with notes of molasses, honey and a touch of tropical spice. Fresh lime juice introduces, that fresh tart kick, that wakes every cell in your body up. A gentle addition of pineapple juice, plays with the tropical nature of the drink by adding the signature sweet and tart fruitiness. Finally, a good quality banana liqueur brings rich and tasty banana notes, defining the cocktail, while simultaneously reining in the tartness of lime.

Parasol is a delicious and simple banana daiquiri riff perfect for home parties and family gatherings. It is a bit on the tart side, so if your preference lies on the sweeter side, consider adding a splash of simple syrup, nonetheless it is absolutely worth a try.
