Cocktail author: recipe from Three Cheers, Cocktails Three Ways: Classics, Riffs, and Zero-Proof Sips by Kaitlyn Stewart.

Mojito is a quintessential summer drink. Its cooling and refreshing qualities need no introduction. Kiwito is a deliciously fruity riff on this classic tropical cocktail, bringing the feeling of warm summer sunshine even in the middle of dark and rainy autumn.

Base of the cocktail is split between cachaca and rhum Agricole, both being a cane juice-based spirits, but with different influences. This combination of both creates a vegetal, grassy fusion laying a solid foundation for the drink. Classic addition of mint provides a refreshing herbal coolness, which blends incredibly well with the fruity tartness of kiwi. A touch of lime juices further steers the cocktail into a tart, citrusy direction balanced by the sweetness of sugar, letting individual flavours pop while balancing the overall flavour profile.

Kiwito is a deliciously simple and effective Mojito riff full of unusual and refreshing flavours. Perfect for the summer, yet just as refreshing in autumn.
