Cocktail author: adapted from a recipe created by Joseph "Joe" Brophy at Le Verre à Monique in Geneva, Switzerland.

Sam Ross has created many modern classics. Paper Plane is one of those creations, that has already manged to inspire many different variations. El Avioncito is a Paper Plane riff bringing Alpine flavours to the mix with the use of amaro, laden with herbal notes.

Main, or rather only, spirit in this equal parts cocktail is bourbon with notes of aged oak, caramel and butterscotch. Amaro Braulio moves the drink into a bitter direction with an addition of complex herbal notes. A touch of lemon juice gives the cocktail a bright tart spark with simple syrup reestablishing the balance. A few drops of saline solution, subtly alters the overall flavour profile letting the herbal notes to pop just a bit more and helping to tame the bitterness.

All in all, El Avioncito is a quite bold and herbaceous take on the Paper Plane. A sophisticated and complex drink that is absolutely worth a shot.
