Celine Fizz

COCKTAIL INGREDIENTS:
- 60 ml Gin
(Preferably Plymouth)
- 22,5 ml Elderflower Liqueur
- 22,5 ml Fresh Lemon Juice
- 22,5 ml Simple Syrup
- 22,5 ml Egg White
- 30-90 ml Soda Water (Chilled)

GARNISH:
- Orange Twist

INSTRUCTIONS:
• Combine all of the ingredients except soda water in a cocktail shaker.
• Dry shake (without ice) to emulsify the egg whites.
• Add one or two ice cubes and shake until fully dissolved.
• Pour the contents into a chilled cocktail glass and let it set for a minute or two in the fridge, until the foam fully forms.
• Top up with chilled soda water to raise the foam. (For better result you can make hole with a straw to pour the soda water through or pour it along the bar spoon in order not to ruin the foam.)
• Garnish with an orange twist.

A tasty fizz is a thing of beauty and admiration – a delicious, balanced drink with decadent foam on top. Celine Fizz checks all of these boxes and then some. Sure to please any fizz lover.

Base of the cocktail is Plymouth Gin with smooth, earthy, juniper-forward flavour profile strongly present in the drink. Together with fragrant, sweet botanical notes of the elderflower liqueur it sets the tone for your drinking experience. Refreshing tartness of lemon lifts the cocktail while adding playfulness. Touch of simple syrup restores the balance between the ingredients, helps to tease out the individual notes and bring them forward. Egg white, a must for a true fizz, together with chilled soda water are responsible for the thick layer of indulgent foam, which I, personally, like to further enrich with a fragrance of an orange zest.

All in all, Celine Fizz looks quite simple on paper, but as any other fizz, it all comes down to execution. That means the process itself requires some love and patience, but the result is truly worth it, at least for the fizz lover like me.
