COCKTAIL INGREDIENTS:
- 30 ml Pisco
- 30 ml Amaretto
- 30 ml Passion Fruit Pulp, Scant
- 30 ml Agave Nectar, Scant
- 30 ml Fresh Lemon Juice
- 30 ml Egg Whites

GARNISH:
- Mint Leaf
- Dried Clover Blossom
- Half of Passion Fruit

INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker.
• Dry shake to emulsify the egg whites.
• Add ice and shake until chilled.
• Double strain into a chilled cocktail glass.
• Garnish with a half of passion fruit, mint leaf and a dried clover blossom.

I guess one could call Amaretto Sour a modern classic, which does not need any improvements. However, Autoretrato is a deliciously tropical riff, that manages to reinvent the classic for a completely different audience.

Only spirit in the cocktail is pisco with distinct grape notes followed by the subtle floral and fruity flavours, allowing it to pair incredibly well with the sweet nutty nature of amaretto. Passionfruit pulp takes the cocktail in a rather unusual almost tiki direction, giving the drink a kick of well-balanced complex sweet-tart fruitiness. A touch of agave nectar and lemon juice wake the cocktail up with a delicious floral tartness while maintaining the delicate balance. Finally, egg whites provide the foamy decadent texture we all love in cocktail.

Autoretrato is a deliciously complex and fruity cocktail, great for garden parties and summer gathering, sure to please a wide audience.
