COCKTAIL INGREDIENTS:
- 45 ml Amaro Montenegro
- 30 ml Unaged Overproof Rum
- 30 ml Fresh Lime Juice
- 22,5 ml Cinnamon Syrup
- 22,5 ml Fresh Pineapple Juice
- 22,5 ml Fresh Grapefruit Juice
- 120 ml Crushed Ice

GARNISH:
- Pineapple Fronds
- Edible Flowers
- Mint Sprig
- Lime Wheel

INSTRUCTIONS:
• Combine all of the ingredients in a blender tin.
• Flash blend with crushed ice.
• Pour the contents into a cocktail glass.
• Top with more crushed ice if needed.
• Garnish with some pineapple fronds, edible flower, lime wheel and a sprig of mint.

While it might be a bit late in the year for tiki cocktails, this particular recipe combines rum and Amaro Montenegro, so masterfully, that it simply cannot wait until the next summer.

Base of the cocktail is Amaro Montenegro, an unusual choice for a tiki, with bitter-sweet herbaceousness bolstered by citrus notes of oranges. Unaged overproof rum gives this cocktail the necessary proof along with the taste of molasses and tropical fruit, creating a complex fusion when blending with the amaro. Touch of pineapple juice returns the cocktail on a true tiki path with sweet and tart tropical fruit flavour, which is further reinforced by the complex bitter tartness of grapefruit. Lime juice, provides a fresh and lively kick with that familiar sour and tart profile. Cinnamon syrup balances the cocktail out, while also providing some additional depth and complexity of tropical spice.

Tuscan Toucan is a tasty and slightly unusual tiki cocktail with a complex base of amaro and unaged rum. Great way to get into a tiki game, if you are an amaro lover.
