Highland Picnic
COCKTAIL INGREDIENTS:
- 30 ml Mezcal
- 30 ml Reposado Tequila
- 15 ml Fresh Lime Juice
- 15 ml Yuzu Juice
- 15 ml Simple Syrup
- 15 ml Agave Syrup
- 30 ml Egg Whites
GARNISH:
- Dehydrated Yuzu Wheel
- Powdered Hibiscus
INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker.
• Dry shake to emulsify the egg whites.
• Add ice and shake until chilled.
• Double strain into a chilled cocktail glass.
• Garnish with a dehydrated yuzu wheel and some powdered hibiscus.

For me, Highland Picnic is a one of a kind mezcal/tequila sour. The balance, complexity and overall experience is almost too good to be true.
Cocktail base is split between bold, smoky mezcal and mellow vegetal agave notes of reposado tequila, bringing the best of both worlds. The sour component is also split between traditional lime and the fragrant, floral yuzu. This combination brightens the cocktail while also subtly introducing elements usually not found in the classical citrus. A touch of simple and agave syrups delicately balances the cocktail, without oversteering the drink into any particular direction. Finally, the egg whites give the cocktail lovely decadent texture, for the most pleasurable drinking experience. I love a little powdered hibiscus addition on the foam. It gives a kick of flagrancy and tartness elevating the egg white foam to the next level.
All in all, Highland Picnic is delicious and complex sour style cocktail. The list of ingredients is a bit long, but it is absolutely worth the effort. If you ever have a chance, I highly recommend trying it.
